Ingredients
  • 1/2 cup walnut halves
  • 6 large eggs
  • 1 1/2 cup heavy cream half and half of milk
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 pinch salt
  • 6 ripe bananas peeled
  • 1/2 cup honey
  • 12 slices of bread brioche a day old
  • 8 tablespoons unsalted butter
  • 4 tablespoons vegetable oil
Instructions
  1. Preheat oven 356. Toast walnut halves for 10 min until brown, set aside-chop when cool.

  2. Whisk together eggs, vanilla extract, cream cinnamon nutmeg salt, combine bananas ,maple syrup+ walnuts in another bowl. Lay out 6 slices of bread. Top each slice with 1/3 cup of the banana mixture. Top with remaining bread to seal a sandwich.

  3. Place sandwiches in a shallow baking dish in a single layer.Pour egg mixture over bread +soak for 10min. Turn sandwiches over, soak for another 10 min.

  4. Heat 2 tablespoons butter and 2 vegetable oil in a large skillet. Fry sandwiches 2-3 min until golden brown. Place the ready ones on wire rack in order to keep warm.
