Ingredients for a large glass:
  • 1 cup cup Plain Four or All-purpose flour
  • ½ cups Unsweetened cocoa powder
  • ¾ teaspoons Baking soda
  • ½ teaspoons Sea salt
  • 2 Large Eggs
  • ½ cups Granulated Monkfruit Sweetener
  • ¼ cups Light olive oil - sub extra virgin
  • ¼ cups Greek yogurt
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Instant espresso powder
  • 1-½ cup Grated zucchini (strained)
  • ¾ cups Sugar free dark chocolate chips
Instructions
  1. Preheat the oven to 175 C/350 F

    Spray a 9 x 2.5 loaf tin with cooking spray, and line with parchment, set aside.

  2. Mix dry ingredients
    Whisk together the flour, cocoa, baking soda, and salt in a medium bowl, and set aside.
  3. Mix wet ingredients
    Whisk the eggs, monkfruit, light olive oil, Greek yogurt, vanilla and instant espresso powder until combined.
  4. Combine Wet and dry ingredients

    Pour the wet ingredients into the dry ingredients and stir until combined.

  5. Add Zucchini

    Fold in the zucchini and ½ cup of the chocolate chips, and reserve the rest for the topping.

  6. Pour into Tin

    Pour the batter into your prepared loaf tin

  7. Bake

    Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
