Put the yogurt, honey, vanilla extract, and stevia into a bowl, and mix them with a spoon.
Line a baking pan with parchment paper and, using a tablespoon, scoop portions of the mixture and place them scattered across the pan so they don’t touch each other.
Transfer the pan to the freezer and let it chill well for about 2 hours.
Remove the pan from the freezer, transfer half of the frozen mixture to a chopper blender and beat it until it becomes crumbly.
Gradually add half of the water until the mixture becomes smooth and has the texture of ice cream. (At this point, add 25-35g of water depending on how quickly the mixture reaches an ice cream-like texture.)
Transfer to a bowl and follow the same process for the remaining mixture.
Serve in chilled glasses with berries and honey.
