Preheat the oven to 220°C (430°F) set to fan.
Cut off the ends of the apples, peel them, core them, and cut them into cubes.
Transfer the apples to a 30 cm round baking pan, add the honey and cinnamon, and mix them well with a spoon.
Add the butter over the apples.
Put the pan in the oven and bake the apples for 12 minutes at the top oven rack position. Halfway through the baking time, mix the apples well.
Remove the pan from the oven and set it aside.
Keep the oven’s temperature to 220°C (430° F) set to fan.
In a bowl add the oats, walnuts, cinnamon, 10 g ground coconut, butter, salt, and honey, and mix them very well firstly with a spoon and then with your hands until the mixture looks like wet sand.
Spread the mixture over the apples and -optionally- add the raspberries and the rest of the ground coconut.
Put the pan in the oven and bake the apple crumble for 15 minutes at the top oven rack position.
Remove the pan from the oven and serve.
